POPSParticipative dining experiences Old article, but probably more relevant. Creating niche and limited seating venues for dining seems to be a viable trend. Also allows for a more meaningful social dining experience. I only wish I could remember the name of the small venue that is in NYC and the two people that host it only have it once a month. Just can't find my bookmark to that site.

They can hire from an established immigrant 'underground,' where illegal immigrants have established support networks amongst themselves, and are prepared to accept the minimal wages by virtue of their status. How much will the immigrants with working visas be paid. The 'value' of illegal immigrants is not through their numbers, but through the ability to get someone to do dirty jobs, on low wages, with the threat of exposure, and deportation. A visa is missing the point. It's also a means of getting workers at relatively low wages, that are registered, with the obligation to be repatriated when they were not needed.
