POPSAdvanced-level tips for the best ever no-knead bread More: The crust…is where the no-knead method kicks unequivocal butt for the home baker. Artisanal loaves have a thin, crisp crust that is difficult to duplicate in a home oven. Home “sandwich loaves” and the like will turn brown on top, but the crust is just a lifeless dry area at the edge of the loaf… In a commercial oven, the necessary moisture comes from injectors that flood the oven with steam when the loaves are put in…The Sullivan/Bittman no-knead recipe, however, uses the genius innovation of baking the bread in a pre-heated Dutch oven (a heavy, oven-safe, lidded pot). The lid is placed on the pot for the first 30 minutes of baking, so steam from the wet dough is trapped in close proximity to the surface. The result is perfect gelation and a very professional-looking crust. Definitely going to try this tip the next time I make a batch of bread . Speaking of which...

POPSreview: Oasis Market & Restaurant, Oakland More: I've been in a few more times recently, and I still really like this place, but with some reservations. The biggest issue is the confusion behind the food counter; I don't know if it's a language issue, or just some new workers or both, but every time I've been in recently people seem to not be quite sure of what's going on, can't totally answer some simple questions, have made the wrong food, there have been long delays, forgotten items, things like that. So just pay close attention to your order when you go there for the meals, and bring your patience. There's also a little inconsistency; I've had great dolmas and kabobs there, but the last time I got each item they were both not quite right, the meat was tough and the dolmas were a little hard. The good: the falafels have been fantastic every time I've had them, the baba ganoush is the best that I've ever had, the pita is still pillowy and delicious…

POPSThe Trophospher, Where The Business Action Hero Toils Inside companies -- like in war -- strategy is highly valued. Clear strategies followed by tactics. In fact, tactics are where many strategy lovers bump their heads. This books strikes a chord that I've been thinking about for years working in the trophospher: collaboration is the key to sustainable leadership and lasting relationships. Not a new concept, but one that is gaining momentum among what I call the new generation of managers who pull together the right people with the right skills for the right job, and seek input/feedback along the way that gets poured back into any existing "process" or "framework." "The New How: Creating Business Solutions through Collaborative Strategy" -- to which I'd add "and Tactics" -- is one book I must read. I'll get it on my 2010 BookStack!

POPSBuns and Guns At the "Buns and Guns" fast food restaurant, deep in Beirut's Hezbollah-dominated southern suburbs, the chefs wear military helmets, the food is wrapped in camouflage paper, and the motto is "a sandwich can kill you".The restaurant opened three weeks ago, with a military theme that is drawing in a sector of Lebanese proud of Hezbollah's battlefield successes.

POPSIke's Place sandwiches, San Francisco More: Caution: Ike's Place can be very busy, and the wait times can be very long, but if you avoid the DAILY 11:30-3:30 p.m. rush it shouldn't be too long. Or even better, call in your order and we will tell you when to come and get it. So why does it always take 'forever' at Ike's? Good question! Unlike most sandwich shops where the bread was baked earlier that morning, the bread your sandwich is made on isn't baked until after you order your sandwich. That means every sandwich is freshly baked to order.

POPSJeff Galloway: Food - the importance of "prefueling" before exercise
More: If you fear undesired pit stops or gastric distress, train your intestinal track to tolerate food. Start with one saltine, or one pretzel, and then work up to a more substantial intake… Even if you are working out for less than an hour, you should still eat a pre-run snack and drink water. Athletes who ate no breakfast, biked hard for 50 minutes and then sprinted for 10 minutes to the finish were able to sprint 6% harder when they consumed adequate water vs. minimal water… One way to organize your pre-run fueling is to eat part of the upcoming meal prior to your workout. For example— • If you run in the morning, enjoy a banana before your workout, and then afterwards refuel with the rest of your breakfast, such as a bagel and a yogurt. • If you run at lunch, eat half a sandwich before your run and then enjoy the rest of your lunch afterwards. • For afternoon or afterwork sessions, enjoy a granola bar or some graham crackers pre-run, and then refuel with chocolate m
