POPSBanana Bread Let me start off by saying that I do not like banana bread in general. Having said that, this recipe is excellent. I only made a half batch, as I only had 3 bananas, but I did not cut the vanilla, cinnamon, or salt in half. The rest of the ingredients I did cut in half. I also added a little extra flour (~1T) as the batter seemed too runny. I tasted the batter, and it was everything I could do to bake it, because the batter was so tasty. I followed the directions otherwise, except that I subbed in sourcream for the creme fraiche, and I baked it in a bundt pan. Then I turned it out of the pan and topped it with a glaze made form 3T milk, 1 t. vanilla, 1 t. cinnamon, and enough powdered sugar to make it a glaze consistency. Excellent. I'm about to go back for another piece while it is still warm.

POPSChocolate Pumpkin Cake Recipe Check the source for a picture (that would NOT clip for me). This cake is very very good. I made it today. Frosting : 6oz. cream cheese softened. 1 1/2 cups powdered sugar 2 1/4 tsp cocoa 1/4 tsp cinnamon 3/4 tsp vanilla Beat until creamy In separate bowl beat 1 1/2 cups heavy cream and 3/4 cup powdered sugar and scant 1/4 tsp orange food coloring until soft peaks form. Fold whipped cream mixture into cream cheese mixture. After frosting cake, chill 30 min. Chocolate glaze: 4oz bittersweet chocolate, chopped. 1TBS cold butter 3TBS corn syrup. Place these items in a medium heatproof bowl. Bring 1/2 cup heavy cream to a boil and pour over chocolate. Let stand 3 min. and whisk smooth. Cool 3 to 5 min. and pour over top of cake.

POPSHot Chili Pepper and Herb Pizza Active time: 35 minutes Baking time: 20 minutes Serves: 4 My quest for a hot pepper pizza took on a life of its own and ended up a very pleasing combination of chewy crust, zesty hot peppers, tangy sauce, and refreshing herbs. I served two 14″ pizzas to four people and there ended up being one slice left… only because we were all too polite to lay claim to the last piece.

POPSUsing the broiler as an upside-down grill Preheat oven to 550 before broiling AND keep the iron skillet inside the oven during that time. Key is having a very HOT pan that you put the raw food into. THEN you put it back into the oven and turn on the broiler. Turning is often unnecessary.
