 The Best Browned Beef Stew -- --Ever By: Christina Chavez Ingredients * 1-1 1/2 lb cubed beef stew meat * 1/2 cup flour * 1 1/2 teaspoons salt * 1/2 teaspoon pepper * 1/4 cup vegetable oil * 1 onion, chopped fine * 1 carrot, chopped fine * 1/4 cup finely chopped celery, with a few minced leaves * 1 tablespoon dried parsley * 1 pinch thyme * 3 1/2 cups beef broth * 2 medium potatoes, diced * 2 carrots, diced * 2 onions, diced Directions 1. Put flour, salt and pepper in a large ziploc bag. 2. Heat oil over medium heat in a large dutch oven. 3. Place meat in bag with the flour and shake until well coated. 4. Shake off meat pieces and add them to the oil and stir until slightly browned, Add remaining flour from the bag and the finely chopped onion. 5. Stir until well browned. 6. Add finely chopped carrot and next 4 ingredients.

 My kids like to refer to this as “creamy pasta” and request it often. As I don’t like to use a lot of processed foods, I was trying to find a way to make a healthier version of this classic recipe, and I was able to come up with a way! This recipe is for a family of four. 1 pound 93% lean ground beef handful of onions clove of garlic 1 cup of fresh sliced mushrooms 2 cups organic beef broth 1 teaspoon organic tomato paste 8 ounces sour cream (low fat or non-fat) Salt and pepper to taste 12 ounces egg noodles Brown your onions and garlic in olive oil under the onions are soft, about five to ten minutes. Add the ground beef and beef broth and cook until beef is no longer pink, add tomato paste and the sour cream, cook a little longer until mixture starts to thicken, add salt and pepper to taste.  More: This particular frittata got wrapped up and taken to Seward Park for a dinner picnic, which is almost as good an idea as Clean Out the Fridge Frittata. Imagine a dinner party where you invite all the interesting people you don’t see nearly enough, but with the added benefit of not having to clean your house. It’s genius, I tell you. Throw in some blankets, some grapes, salad, bread, cheese, a bottle of wine, and cookies or cupcakes (or in our case, both!) and you have the makings of a very fine evening indeed. IMG_1674 As an extra bonus, when at last it gets dark and you have to pull yourself away from the park and your friends, you’ll have a much cleaner fridge to come home to. I'm my world, that's never a bad thing.

Spoon some leftovers such as rice salad or a vegetable mixture onto the center of a cabbage leaf and roll into a neat little package. Bake in medium heat oven until hot. Enjoy your easy and healthy version of stuffed cabbage, a traditional eastern European dish. Braise red cabbage with a chopped apple and red wine. This is a child-friendly dish, since the alcohol (but not the flavor or the flavonoids) will evaporate. Combine shredded red and white cabbage with fresh lemon juice, olive oil, and seasonings such as turmeric, cumin, coriander and black pepper to make coleslaw with an Indian twist. Sauté cabbage and onions and serve over cooked buckwheat for a hardy side dish. Use shredded raw cabbage as a garnish for sandwiches.

 Tomatoes are a great addition to bean and vegetable soups. Enjoy a classic Italian salad-sliced onions, tomatoes and mozzarella cheese drizzled with olive oil. Combine chopped onions, tomatoes, and chili peppers for an easy to make salsa dip. Purée tomatoes, cucumbers, bell peppers and scallions together in a food processor and season with herbs and spices of your choice to make the refreshing cold soup, gazpacho. Add tomato slices to sandwiches and salads.
