POPSBeef Stroganoff- The Healthier Version My kids like to refer to this as “creamy pasta” and request it often. As I don’t like to use a lot of processed foods, I was trying to find a way to make a healthier version of this classic recipe, and I was able to come up with a way! This recipe is for a family of four. 1 pound 93% lean ground beef handful of onions clove of garlic 1 cup of fresh sliced mushrooms 2 cups organic beef broth 1 teaspoon organic tomato paste 8 ounces sour cream (low fat or non-fat) Salt and pepper to taste 12 ounces egg noodles Brown your onions and garlic in olive oil under the onions are soft, about five to ten minutes. Add the ground beef and beef broth and cook until beef is no longer pink, add tomato paste and the sour cream, cook a little longer until mixture starts to thicken, add salt and pepper to taste. Serve over egg noodles and enjoy. www.staying-healthy.info

POPSrecipe: Zucchini "noodles" with pesto Made this last night. Fairly tasty, although my tastebuds wanted a bit more punch. Not sure what – olives wouldn't be quite right. Definitely want to try the ponzu-sesame oil-chili sauce version.

POPSSpinach Lasagna Finish this layer with half of the remaining spaghetti sauce. Add a second layer of noodles, topping with the remaining cheese mixture, spinach, and mozzarella cheese. Top with the final layer of noodles and remaining spaghetti sauce. Sprinkle the reserved Parmesan cheese over the top and bake for thirty minutes. Remove from oven and allow to set for 10-12 minutes, then slice and serve.

POPS"20 most bizarre Craigslist adverts of all time" 4) Duck mask "Full head rubber mask, old, has discoloration on white feather part from age, storage. Hey I got it on my big head, so it works that way." 5) Woman to sit in my bath tub full of noodles, wearing a bathing suit "I will pay you $1 to sit in my bathtub full of noodles while you wear a one piece bathing suit. I will not be home, nor will anyone else while you do this. I will leave the key for you, and you will sit at your leisure. DO NOT bring any sauce. I will season the pasta after I return home prior to dinner."

POPSrestaurant: Pho Ga Hai Phong, Oakland
New restaurant in our neighborhood. Tasty food. More: Since age 9, Mommy had to cook all the meals for her entire family of eight, because her parents were out working hard to catch fish on their boat all day. She learned to make soup broth and other simple meals by wandering around and watching the neighbors cook. When she was 13 years old, she learned to make pho and honed her Vietnamese culinary skills…Mommy often worked in various restaurants…as a dishwasher or assistant in the kitchen, where she observed the chefs preparing exquisite dishes…It was Mommy’s dream to be the head chef of a restaurant where she could determine the menu items and share her home-style cooking and serve her family's favorite dishes, such as Pho Ga, Bun Rieu (vermicelli noodles with shrimp, crab, and egg soup), clam chowder, BBQ short ribs, and New York steak with everyone. This is why the Pho Ga Hai Phong menu offers 3 distinct cuisines: Vietnamese, Chinese, and American.

POPSThe economics of modernity (one of my favorite clips ever) I really love this clip. Speaks to the rat race so many of us live in...trying to make enough money to buy ipods, laptops, cars, clothing, jewelry and all sorts of other things that we don't necessarily need and that don't truly make us happy. The irony is that the toll it takes on us is probably damaging to our well being, both physically and emotionally.
