A study in HortScience Review cites three studies showing that fruits and vegetables are less nutritious than they were a few decades ago. Because farmers want food to grow faster, for quicker profit, crops no longer have time to absorb natural nutrients and chemical-based fertilizers can’t provide those nutrients. Money wins out again. And consumers lose, again.
