POPSShrimp Fritters Once you get your mixture together, check the fritter batter for taste and color. You should be able to see the Old Bay in the batter – if not, go ahead and add a little more. Now prepare your fryer. It is best to use a “Fry Daddy” type, but whatever method you use, set the temperature to 350 degrees. You will need two spoons for this – one to drop the batter in the oil and another to take it out! Remove a large spoon of fritter batter from your bowl, being sure you have at least one portion of shrimp in every serving. When the oil is hot enough, slide a portion of fritter into the fryer and it will rise to the top. (Remember – like pancakes, the first one rarely comes out perfectly.) Once you have tasted your first fritter, adjust your batter, adding more flour if you need it thicker or more club soda if you find it uncooked in the middle but golden brown on the outside.
