POPSThree Sisters Corn Chowder Heat the oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes. Cut the squash into 1/4-inch dice and add to pot along with the potato. Stir in the stock and bring to a boil. Reduce heat to low, cover and cook 20 to 30 minutes or until vegetables are tender. Remove the lid, add the beans and all but the 1/4 cup of corn and cook 15 minutes longer to thicken and blend flavors. Stir in the soy milk and simmer about 5 minutes to blend flavors. Remove from the heat. Transfer up to 2 cups of the soup to a food processor or blender and puree until smooth. Stir the puree back into the chowder and season to taste with salt and pepper. Ladle the soup into bowls and garnish with the reserved corn kernels and the parsley.

POPSVegan Okara Meatloaf I made this last night with the okara from my first batch of homemade tofu, and it was effing awesome! I used ketchup instead of tomato paste and i added some more nutritional yeast, mushrooms, frozen peppers and onions, and two crumbled slices of tofutti american cheese. I also left out the worcestershire, mince, and used regular yellow mustard and a dash of liquid smoke. I made garlic roasted potatoes on the side. It was kindof amazing.

Spinach is filled with flavonoids, which may have antioxidant properties, and its plentiful vitamin K (1,000 percent of the daily recommended value in 1 cup of cooked spinach) contributes to bone health. The list of nutrients that come in large quantities in a serving of spinach is a long one, including iron, vitamins A and C, manganese, folate, magnesium, calcium, potassium, vitamins B2 and B6, tryptophan and dietary fiber. All this, with no prep time and 10 to 20 seconds of cooking, is hard to beat.

POPSHow to cold-brew Japanese green tea More: Place 1-2 T. of green tealeaves into a 4-8 oz. glass or ceramic teapot. Fill the pot with ice cubes made from filtered tap water or low-mineral-content spring water. Let sit until enough of the ice has melted to produce a couple of ounces of tea liquor. Infusion time will depend on air temperature. Pour off liquor into individual cups or glasses. For the second and third infusions, wait until more of the ice has melted, or fill the pot again with new ice cubes and cold water. Infuse for 15-20 minutes or longer, to taste. This technique yields delicious results with both sencha and gyokuro, as well as Chinese green teas.

POPSMushroom bourguignon recipe Lower the flame to medium and add the second tablespoon of olive oil. Toss the carrots, onions, thyme, a few good pinches of salt and a several grinds of black pepper into the pan and cook for 10, stirring occasionally, until the onions are lightly browned. Add the garlic and cook for just one more minute. Add the wine to the pot, scraping any stuck bits off the bottom, then turn the heat all the way up and reduce it by half. Stir in the tomato paste and the broth. Add back the mushrooms with any juices that have collected and once the liquid has boiled, reduce the temperature so it simmers for 20 minutes, or until mushrooms are very tender. Add the pearl onions and simmer for five minutes more. Combine remaining butter and the flour with a fork until combined; stir it into the stew. Lower the heat and simmer for 10 more minutes. If the sauce is too thin, boil it down to reduce to the right consistency. Season to taste.

POPSTips for tasty vegetarian collard greens It's funny to see the range of advice, from traditional Southern "they've gotta cook an hour, at least" to "yikes, do it Italian-style and braise them for 20 minutes max" to "use Indian spices and cook for 5 minutes" to "ick, don't cook them at all, use them raw in wraps!" Of course, as a 4th-generation Californian who also has Tennessee heritage, I think they all sound worth trying! :lol:
