 Once you get your mixture together, check the fritter batter for taste and color. You should be able to see the Old Bay in the batter – if not, go ahead and add a little more. Now prepare your fryer. It is best to use a “Fry Daddy” type, but whatever method you use, set the temperature to 350 degrees. You will need two spoons for this – one to drop the batter in the oil and another to take it out! Remove a large spoon of fritter batter from your bowl, being sure you have at least one portion of shrimp in every serving. When the oil is hot enough, slide a portion of fritter into the fryer and it will rise to the top. (Remember – like pancakes, the first one rarely comes out perfectly.) Once you have tasted your first fritter, adjust your batter, adding more flour if you need it thicker or more club soda if you find it uncooked in the middle but golden brown on the outside.  While the cable and network news outlets have been filled with coverage of the tragic disappearance and murder of Sandra Cantu, along with the ongoing saga of the Caylee Anthony murder, and Haleigh Cummings abduction, not one minute of coverage has been given to the murder Bhia Hadid. Volumes both in print and online have been written about the little Cantu, Cummings, and Anthony girls, but I have yet to see one article devoted to Hadid except for very brief statements on the case from Chicago-area media outlets (Orland Park is just outside Chicago). In fact, the only outrage that has been expressed in this case is from the Muslim community, who are outraged not over the little girl’s brutal murder, but over the fact that Nour Hadid was not allowed to wear her headscarf for her mugshot.

 A few notes: An oven thermometer doesn't make your oven more functional, it makes it functional . The Perfex pepper mill is a bit pricey, but literally heirloom-quality – I inherited mine from my mother, almost 15 years ago, and she'd had it for as long as I can remember. A Dutch oven is really useful for a variety of things; the monkey and I have a small, 2-quart version that works nicely for the two of us. The Benriner mandoline is a kitchen delight, and can be found for as little as $15 at many Asian grocery stores. Microplane zesters and graters are a pleasure to use. And I'd recommend bamboo spoons over wooden, myownself. Didn't clip the tiffin box because I think the choice of how to carry one's lunch is strongly determined by individual taste, and it's a mistake to try to guess what somebody else will like. (I wouldn't like or use a tiffin box, f'rinstance.)
