Home “sandwich loaves” and the like will turn brown on top, but the crust is just a lifeless dry area at the edge of the loaf… In a commercial oven, the necessary moisture comes from injectors that flood the oven with steam when the loaves are put in…The Sullivan/Bittman no-knead recipe, however, uses the genius innovation of baking the bread in a pre-heated Dutch oven (a heavy, oven-safe, lidded pot). The lid is placed on the pot for the first 30 minutes of baking, so steam from the wet dough is trapped in close proximity to the surface. The result is perfect gelation and a very professional-looking crust. Definitely going to try this tip the next time I make a batch of bread . Speaking of which...

POPSHot Air: Welcome to the Obama Administration’s “New Transparency” I’m sure it is … for analysts and Fannie and Freddie workers, but I’m not sure taxpayers should share that optimism. The report states the U.S. Treasury will receive preferred stock paying 10% dividends and warrants to acquire nearly 80% of the common shares in Fannie and Freddie. However, the Treasury has already loaned $60 billion to Fannie and $51 billion to Freddie. At this point, it’s hard to believe more money is the answer. Maybe the New York Times was right: Democrats plan to talk about deficit reduction in 2010 but not do anything about it for now. Or as President Obama puts it: “Mr. Obama calls it “a false choice” to pit spending to spur the economy against reducing the deficit. His advisers say the president, and American voters, favor both " spending to create jobs in the short term, and commitment to spending discipline and deficit reduction over the long term.”

that Democrats haven’t reached a deal. The Senate is moving on to a year-end defense appropriations bill until Saturday as Majority Leader Harry Reid tries to whip his caucus into shape. We don’t know who is objecting behind closed doors, but Nebraska’s Ben Nelson, who opposes abortion and some tax increases, is the most public of the skeptics right now. Reid is trying to spur action by imposing a hideous, around-the-clock schedule on the Senate through Christmas, but few believe right now that Reid can make his year-end deadline. “With Mr. Nelson's vote in doubt, President Barack Obama met with Maine Sen. Olympia Snowe, the lone Republican to show interest in supporting the package, to see if she would back the bill. Sen. Snowe is an abortion-rights supporter. ‘He'd prefer to get this moving,’ Sen.
