POPSrecipe: Clean-out-the-fridge frittata More: This particular frittata got wrapped up and taken to Seward Park for a dinner picnic, which is almost as good an idea as Clean Out the Fridge Frittata. Imagine a dinner party where you invite all the interesting people you don’t see nearly enough, but with the added benefit of not having to clean your house. It’s genius, I tell you. Throw in some blankets, some grapes, salad, bread, cheese, a bottle of wine, and cookies or cupcakes (or in our case, both!) and you have the makings of a very fine evening indeed. IMG_1674 As an extra bonus, when at last it gets dark and you have to pull yourself away from the park and your friends, you’ll have a much cleaner fridge to come home to. I'm my world, that's never a bad thing.

POPSFood of the week: Cauliflower Cauliflower traces its ancestry to the wild cabbage, a plant thought to have originated in ancient Asia Minor, which resembled kale or collards more than the vegetable that we now know it to be. The cauliflower went through many transformations and reappeared in the Mediterranean region, where it has been an important vegetable in Turkey and Italy since at least 600 B.C. It gained popularity in France in the mid-16th century and was subsequently cultivated in Northern Europe and the British Isles. The United States, France, Italy, India and China are countries that produce significant amounts of cauliflower.

POPS Blue Duck Down And we had a lovely dinner: a little fois gras, some roasted Maine Scallops with cauliflower and almonds & brown butter, oven roasted bone with paprika crust and country bread, sliced veal with white tuna sauce and roasted organic chicken with buttermilk and herbs. Everything was delish, but I think the O’s especially enjoyed gnawing on the oven roasted bones. Such a soul satisfying dish after a long week.

POPSFood of the Week: Beets Store beets unwashed in the refrigerator crisper where they will keep for two to four weeks. Cut the majority of the greens and their stems from the roots, so they do not pull away moisture away from the root. Leave about two inches of the stem attached to prevent the roots from "bleeding." Store the unwashed greens in a separate plastic bag where they will keep fresh for about four days. Raw beets do not freeze well since they tend to become soft upon thawing. Freezing cooked beets is fine; they'll retain their flavor and texture.

Combine chopped onions, tomatoes, and chili peppers for an easy to make salsa dip. Purée tomatoes, cucumbers, bell peppers and scallions together in a food processor and season with herbs and spices of your choice to make the refreshing cold soup, gazpacho. Add tomato slices to sandwiches and salads. POPSFood of the week: Olives Tips for Preparing Olives: To pit olives, press them with the flat side of a broad bladed knife. This will help break the flesh so that you can easily remove the pit with your fingers or the knife. The brine in which olives are packed can be used as a replacement for salted water in recipes. Toss pasta with chopped olives, tomatoes, garlic, olive oil and fresh herbs of your choice. Marinate olives in olive oil, lemon zest, coriander seeds and cumin seeds.
