Tips & techniques for homemade ice cream from Shuna Fish Lydon
Lexica
by Lexica  1-1-2010    1
Lots of excellent technical advice, especially in the notes at the end of the recipe. More: Never cook high acid dairies like buttermilk, crème fraiche, yogurt, cultured cheeses. Always add high acid liquids to ice cream base after chilling it through and through. High acid liquids: citrus juice, the above dairies, molasses, fruit purees, vinegars, etc. An invert sugar is one that exists in nature as a liquid. Examples: corn syrups, glucose, honey, simple syrup, agave syrup, malt syrup, maple syrup, molasses, Lyle's Golden syrup, Treacle, etc. Both Invert Sugars and alcohol will lower the freezing temperature of ice creams and sorbet. Meaning that ice cream and sorbet will not freeze as hard if these are present. For example, it's almost impossible to make smooth chocolate ice cream without at least one invert sugar…

Mars and Twix et al to contain Animal Products

At least theres lots of lovely chocolate that isnt made using cows stomach lining (or other dead animal parts for that matter), still a shame that masterfoods have decided to commit moral and potentially financial suicide. At least they decided to tell us - a 'principled decision' apparently, unlike the one made to exclude vegetarians from their customer base...?

Humbled she ought to be
notareargunner

Other sites of local interest have realised that Mssrs Humble is not the angel her Labour supporters make her out to be. She is in fact dangerous. The reasons? Too numerous to count, but I will give you one. 1 It is the responsibility and duty of a local MP to hold the Executive to account. Now look at her voting record. With this corrupt, inept legislative assembly probable the worst in British political history, she has never once voted against the plethora of bad law, rules and regulations pouring out of Westminster. If she is not doing her job, then what the f**k is she doing taking her £67k plus expenses plus perks plus plus plus for none representation of her electorates problems?

The afterglow: Scientists may be figuring out how brain chemistry influences emotion, but don't expect to see a real love potion anytime soon. That's because you and I are more than just chemicals. We're thinking beings with a host of experiences, values, ideas, and memories—all of which share the stage with the chemical systems for lust, attachment, and romance.

Cioccolata Caldo: Italian Hot Chocolate
mcsmithblack
by mcsmithblack  12-19-2009    1
After watching this video, I just took my favorite hot chocolate recipe and converted it. Doesn't take long (although it does take lots of stirring, with which I found a whisk to be helpful) and the result is as yummy and satisfying as can be. Very nice with a shot of Frangelico or Kahlua (or brandy, rum, what-have-you) and some whipped cream and a shake of cinnamon on top!

Holiday Hazards to your Pets
Nerfzilla
by Nerfzilla  11-23-2009    2
Christmas Trees - These create a whole realm of dangers for your pet. Poorly secured trees can fall on rambunctious pets as the run around or try to climb them. Pine needles can cause GI irritation and perforation. Sharp or breakable ornaments should be kept well out of the way of curious mouths and paws. Christmas trees may contain additives and preservatives, which leech into the water and can be toxic if ingested. Tinsel, yarn and ribbon can cause linear foreign bodies (get wrapped up throughout the intestinal tract) and create a blockage and/or possible perforations. Sweets - Holiday candy can cause GI problems and become toxic once ingested. Chocolate is one of the most common causes of toxic reaction in pets. The darker the chocolate the worse it is. Do not place wrapped boxes of chocolate under the tree- dogs can sniff them out. Also be sure to keep the candy dishes covered so playful paws aren't tempted to fish them out. The holidays make it easier for pets to sneak their
