    Food of the Week: Apples
    kkcapricorn
    by kkcapricorn  10-19-2009    3
Tips for preparing apples: Rinse apples under clear running water like you would any fruit. If organic, don't peel unless the recipe you have chosen requires peeled apples. To prevent browning when slicing apples for a recipe, simply put the slices in a bowl of cold water to which a spoonful of lemon juice has been added. For use in future recipes, sliced apples freeze well in plastic bags or containers.

Combine chopped onions, tomatoes, and chili peppers for an easy to make salsa dip. Purée tomatoes, cucumbers, bell peppers and scallions together in a food processor and season with herbs and spices of your choice to make the refreshing cold soup, gazpacho. Add tomato slices to sandwiches and salads. To keep things colorful, use yellow, green and purple tomatoes in addition to red ones. ~~~~ Most delicious are Jersey tomatoes that you pick from your garden, wash, and bite. so sweet.....

Millions in Nepal facing hunger as climate changes
    kkcapricorn
    by kkcapricorn  8-28-2009
Oxfam recommended in its report that the government and international organizations intervene to ease food shortages in hill and mountain districts and provide assistance during the upcoming planting season. The government should encourage farmers to try new crop varieties and improve water management, and it should integrate climate change strategies into government planning. Ang Dawa, a member of a parliamentary committee tackling climate change, said its effects were already prevalent in Nepal, especially in the mountainous north. She said her village in the foothills of Mount Everest, the world's highest mountain, was covered in several feet (dozens of centimeters) of snow during the winter when she was a child, but now there is hardly any snow.

    by kkcapricorn  6-1-2009    1
A Few Quick Serving Ideas: Use extra virgin olive oil in your salad dressings. Purée roasted garlic, cooked potatoes and extra virgin olive oil together to make exceptionally delicious garlic mashed potatoes. Season to taste. Drizzle extra virgin olive oil over healthy sautéed vegetables before serving. Purée extra virgin olive oil, garlic and your favorite beans together in a food processor. Season to taste and serve as a dip. Instead of putting the butter dish out on the table, place a small cup of extra virgin olive oil out instead to use on your bread or rolls. For extra flavor, try adding a little Balsamic vinegar or any of your favorite spices to the extra virgin olive oil.

    Food of the Week: Spinich
    kkcapricorn
    by kkcapricorn  5-18-2009    2
Yummy. Spinach, whether bunched or prepackaged, should be washed very well since the leaves and stems tend to collect sand and soil. Before washing, trim off the roots and separate the leaves. Place the spinach in a large bowl of tepid water and swish the leaves around with your hands as this will allow any dirt to become dislodged. Remove the leaves from the water, empty the bowl, refill with clean water and repeat this process until no dirt remains in the water (usually two to three times will do the trick). Cut away any overly thick stems to ensure for more even cooking

12% Have gone hungry over the past year. The Undersecretary for the Department of Agriculture's Kate Houston said "This is encouraging" I have no idea why she is encouraged. Maybe that she isn't one of them? Perhaps she expected more. Also "No-one in America should go hungry" Of course prisoners get three meals a day. '

Gas prices hit a record nationwide average of $3.23 per gallon in late May before receding a little, though prices are expected to soar again later this year. Food costs have increased 4.5 percent over the past 12 months, partly because of higher fuel costs. Egg prices were 44 percent higher, while milk was up 21.3 percent over the past 12 months to nearly $4 a gallon, according to the Bureau of Labor Statistics. something's got to give

    by kkcapricorn  10-19-2007
      * Steer clear of large, jumbo and king size orders. Even a medium portion can be big, so share it with a friend. Better yet, opt for the small. * Eat half of what you order. Ask for a doggie bag and enjoy the rest on another day. * Have a bottle of water or diet soda instead of a regular sugar-laden soda. * Order a side salad with your meal. * Savor your food and eat more slowly. Put your fork down between bites. This will help you eat less.
