first one should be a fog instead of cloud,but cloud and fog are similiar anyway.
if you've studied uni physics,you should know what it is.
the plane moves in supersonic speed and produces a shock wave behind it.
the pressure of the area suddenly decreases and thus the water molecules in the air condenses to form a fog.
