michellezm says: Thanks Bignosemousie. I was looking up two ingredients from your recipe (bulgur & cremini mushrooms) when I happened upon this wonderful site. Are they really all edible? ! I don't think I'd risk it!! Wow. Look at all those mushrooms. FYI, corn smut is also known as huitlacoche in Mexico. It is considered a delicacy. Here is a recipe for tamales de huitlacoche. You can buy huitlacoche in a can. I am not inclined to actually eat it, but people do. *shudder. Pic #24 Moral that is fave., Stuff it with a mixture of garlic,parsley,1/3 pork, veal and chicken and cherry or marsala, then steam for- 12 to 15 min. Thicken sauce with cold butter. Simple but D. FYI all the above mushroom is edible, # 24 and #29 (Pocini) is my fave. Chicken of the wood is good but can be tough if it's a little dry. In South Africa, access to most of these exotic mushrooms is extremely limited. I have never heard of half of them. @BNM That corn smut looks pretty grim if you ask me. I think I'll give it a miss. |
