There are stars out there that are much more massive than our sun. Some of which are so intensly hot that they glow blue.

I should imagine that the cause for concern is that there's an upper limit on the size of star, beyond which point the star collapses into a black hole.

So clearly, this thing has been stable long enough to grow old and then die...

Correction, exploding star breaks the CURRENTLY "KNOWN" laws of physics. That's the beauty of science. You're always learning something new. I always find it funny how some scientists are always perplexed when something doesn't happen as expected, like somehow we already know everything there is to be known.
