2 tablespoons salt
3-1/2 cups all-purpose flour, plus more for mixing </P></blockquote><div style="height: 2px; font-size: 2px; background: #dcdcdc; border-bottom: solid 1px #f5f5f5; margin: 2px 4px;"></div><blockquote style="text-align: left; padding: 0px 8px; margin: 4px 0px 8px 0px; background: transparent; border: none;" cite="http://www.frugalvillage.net/2008/09/18/cook-from-scratch/"><P>Beat eggs and salt together with a fork. Slowly add flour in 1-cup increments. Mix with fork until 3 cups of flour have been added. Mix with hands to add an additional 1/2 cup flour. Place your dough on floured counter. Knead and form a ball. Split dough into two balls. Roll one ball of dough flat onto counter until it’s about 1/16-inch thick. Use additional flour to prevent sticking.
Cut using a knife or pizza cutter to any size and width you prefer. Let dry 30 minutes.
Place noodles into a colander to shake out excess flour. Add noodles to boiling water or soup. Takes 20 minutes for them to soften.
