Yummy!! I always use fresh ginger in any ginger cookie recipe, and quite a lot of it.....gives the cookies a bit more of a zing to it. This stuff is great with a nice cuppa tea...

I'm going to make these tomorrow. My family expects to find cookies in the cookie jar when they come over and it's been empty since just after Christmas.
