<BR />6 ounces evaporated skim milk 
<BR />1/2 cup sugar 
<BR />2 leaves unflavored gelatin or 1/2 packet of Knox as equivalent 
<BR />3 pasteurized egg whites 
<BR />1 egg yolk 
<BR /><DIV>Kahlua liqueur optional, to taste

<BR /><DIV>2. Blend cocoa, sugar and milk with a whisk, and heat over a double boiler until sugar dissolves. Cool.

<BR /><DIV>3. Whisk in egg yolk while still warm (but not hot).
</DIV>
<BR /><DIV>4. Heat either Kahlua (if using) or water until boiling in a bowl. Add gelatin and dissolve. 
</DIV>
<BR /><DIV>5. Quickly pour into chocolate mixture and continue stirring until thickened.
</DIV>
<BR /><DIV>6. Meanwhile, whisk egg whites until stiff but not dry, and fold into chocolate mixture.
</DIV>
