The bone can now easily be pulled out and if you wish you can leave the tail on. Lay them on a non- reactive tray and sprinkle evenly with the sea salt and leave for 30 minutes. Sprinkle on the pepper, then the lemon juice and leave for another 30 minutes. If you are going to eat them on the day, then just spoon over the oil and leave for 2-3 hours.
