The smell of food is a message to the brain, that can signify it's nutritional content according to it's ingredients. Fooling sense of smell for the sake of shelf life, and cost saving, makes it seem like the customer's health is low on the priority list. Since, tomatoes are the fruit of a flowering plant, they don't need lemons to make them smell like fruit, or flowers.
