Mmmm. Love chillies. I grow several types. From the mild Pepperdews to the fiery little Devil chillies. Here is a great chilli preserve recipe from Mauritius known as Mazavaroo: "Mazavaroo is a condiment made with hot chillies. Its ingredients vary from cook to cook, with the hottest versions analogous to an exploding inferno. . . * ½ lb small red chillies * ½ lb malaga raisins (or regular black raisins) * ½ lb onions * ¼ lb garlic cloves * ¼ lb fresh ginger root * ¼ lb (2/3 cup) sugar * ½ tablespoon salt * 12/3 cups vinegar Blend ingredients together. michellezm, that sounds delicious. i might just have to give that a go! (looks like this will make quite a lot though....i might just try halving the recipe first time around). Does it last "forever"? Made like this it can be kept in an air-tight container in the fridge for quite a while. For shelf storage purposed I lightly cook the ingredients, heat-sterilise the bottles in the oven and decant whilst still hot and seal immediately. aw, excellent! thanks for the tip my mouth is literally watering already........ I had some mango-scotch bonnet ice cream on the 4th. It was very warm but good. the sweet and creamy offset the heat. |
