Coconut water is the clear liquid found inside a green (immature) coconut. It's fat-free (or almost fat-free) and high in minerals and other healthful things. Coconut milk is made by soaking dried coconut (mature coconut) in hot water, then squeezing to remove the liquid. It's high in saturated fat, but — and this will sound hard to believe, given what we've been told — it's actually good for you, not bad. I need to go clip some of the articles I have on rehabilitating coconut's reputation. What we've been taught about it appears, upon further research, to be simply not true. |
