That's why its always good to know the chef. You have a better idea of what they are throwing on that plate. ; ) Of course, it is only the occasional "exotic" items on the sushi menu that are subject to fraud and this doesn't happen at the best establishments. Real red snapper is good, but over-hyped in the US...it's usually not the most exciting fish to be eaten raw. In Florida, they had a similar problem with the state signature fish, grouper. A lot of local restaurants were busted for illegally serving substitutes. This clip was featured on today's Clipiversity video podcast, and Eric and I debated cheap vs. expensive sushi. I'm all for the cheap stuff as long as it's made fresh by a japanese chef! |
