The researchers say that because the processed carbohydrates are absorbed so quickly, they trigger the release of more of the chemical insulin, which tells the body to lay down more fat.From first hand experience, I know this is a fact. As a diabetice, I can tell you that I require a much larger dose of insulin for high-carb foods, which subsequntly makes me gain weight. I try and limit my carb and trans -fat intake. The trans fats don't really affect the blood sugar very quickly, but they're not food for the heart. Oops. That should have been diabetic and subsequently. I know.
