But Heston Blumenthal's latest
idea took culinary experimentation
to an astonishing new level.

The maverick chef decided he
wanted to find out which parts of
the brain were affected by spices
– so he injected a colleague with
an extremely powerful dose of
chilli oil and placed him in a scanner

The experiment took place at
Nottingham University, where
Blumenthal and his head chef
Ashley Palmer-Watts were given
use of a £5million MRI scanner,
which uses a powerful magnetic
field to produce detailed images of
living tissues.

Duck in Bray, Berkshire – named
the best restaurant in the UK last
week by the Good Food Guide – and
holder of three Michelin stars, said:
"I attached a drip to Ashley that
intravenously fed him chilli oil.
