It's physically impossible for the modified genes in potatoes to cause a flu virus strain that is already closely related to a class of other viruses that have been around for decades. In 1918 the Spanish Flu that wiped out tens of millions worldwide was also a strain of the H1N1 type of influenza virus. GM Food has its a few of its current genes modified for specific purposes, normally to increase quality, flavor, and yield. These genes are quite different than viral DNA.
