Sauté 4 sliced green onions and 1 teaspoon grated ginger for 1-2 minutes. Add 2 cups chicken stock and 2 cups water to pan. Bring to the boil on high. Break 100g vermicelli noodles in half and add to pan with 1 bunch trimmed and sliced choy sum. Simmer for 4 minutes until noodles are tender. Stir in 150g halved oyster mushrooms, 140g can drained and flaked crab meat, 1 tablespoon fish sauce and 2 teaspoons soy sauce. Simmer for 1-2 minutes until heated through. Ladle into serving bowls. Top with extra green onion and a little chopped chilli (optional).
