I believe that the main reason many more among "the lower classes" do not even try to become vegetarian is cultural.

Or a certain type of conservatism whose credo is "never try anything for the very first time.

Why did people eat meat in the first place?

Because it was an evolutionary instinct. It is perfectly natural to eat meat, and that is, in fact what drives the food chain, which is very important to our world, and even what drives species to adapt and evolve for their own benefit.

What would happen if everyone stopped eating meat?

Species would over populate and die out anyway because of it.

Also, meat tastes really good, and has a lot of nutrients in it. Plus if you're a man and don't eat meat, you might be considered "not manly".

So why the hell wouldn't you eat meat?? And if you eat fish and not meat, why the hell does that make any sense?
