Because so often religious conservatives try to enforce their beliefs on people outside their religions. A few examples that pop to mind: "conscience clause" laws for doctors, pharmacists, and other healthcare providers; the Bill O'Reilly-and-likeminded-sorts "We say MERRY CHRISTMAS" campaign; California's Proposition 8, which many religious leaders say is itself a violation of religious freedom.

When a group of people have a track record of jumping from "we think this is the best way to live" to "so we're going to make it illegal for other people to live differently" or "so we're going to remove legal rights from people who believe otherwise", it's neither unreasonable nor "arrogant" (to use your term) for their neighbors to eye them warily when they start talking about their latest idea of how one should live.
