Je les place sur du papier alu sur une plaque allant au four. Le four est réglé sur 50°C, à chaleur ventilée et je les laisse plusieurs heures en surveillant. Il ne faut pas qu’elles cuisent. Je les retourne une ou deux fois. Je retire les tomates du four au fur et à mesure dès qu’elles ont atteint le degré de séchage idéal. C’est là qu’est le secret : trop sèches elles sont dures et pas assez sèches elles ne se conserveront pas (on peut les faire sécher moins = confire, pour une utilisation rapide).
