I made scrambled eggs and bacon this morning. I'll save this recipe for next time.....yummy!

I know. I'm in love, makes me do silly things.

But, just imagine some bacon jam spread on your post-Thanksgiving turkey sandwich. Or wrapped in a tortilla with some scrambled eggs and potatoes. Or wrapped in a pancake and dipped in maple syrup. Or tossed with pasta and veggies.

Or even eaten straight from the jar with a spoon!

No, I haven't. I just found it yesterday. I didn't know such a wonderful thing as bacon jam existed.

I do plan on making it one day. If you make it, let me know.

For sure Mousie, i'm just not sure whether or not i can find adobo/ancho up here. I'll have to check around. I have another recipe that i need it/them for, so i need to anyway.

Lollipop, chipotles in adobo sauce are usually in a small can with three or four peppers in a can. Leftovers can be frozen for future use. For the ancho chile powder, that can be harder to find (although you can buy it online). Just use regular chile powder instead.

N2, do not wonder. It will taste fantastic on pancakes.

I think regular chili powder has spices in addition to ground chiles in there. So it won't be the same, but I doubt it would mess it up to where it won't be good. I mean, they don't call it bacon jam for nothing.

If you can find a dried ancho pepper, you can just grind that sucker up and use that powder.
