Great review of two new books on the rise of the global sushi industry.

“Sushi had started as a form of preservation,” Issenberg says, “but it was becoming precisely the opposite: a way of using the infrastructure of modernity to chaperone a delicate dish around the world.” Over the course of two decades, he writes, “the average price for bluefin tuna paid to Atlantic fisherman rose by 10,000 percent.”
