2 Tbs (30 ml) all-purpose flour
1 cup (250 ml) milk
2 Tbs (30 ml) tomato paste
Salt and freshly ground pepper to taste
2 cups (500 ml) cooked vegetables
6 hard-cooked eggs, peeled and sliced
1/4 cup (250 ml) bread crumbs<BR /><DIV>
							1/4 cup (60 ml) freshly grated Parmesan cheese</DIV>

							stir in the flour. Cook for 3 to 4 minutes and whisk 
							in the milk. Bring to a boil, stirring frequently. 
							Remove from the heat and stir in the tomato paste, 
							salt, and pepper. Mix with the cooked vegetables and 
							layer half the mixture in a greased baking dish. Top 
							with half the sliced eggs and repeat. Combine the 
							bread crumbs and grated Parmesan and sprinkle over 
							the top. Bake uncovered in a 350F (180C) oven until 
							the top is golden brown, about 15 minutes. Serves 4
