Combine crumbled bacon, 1/4 cup cheese, green onions, sour cream, salt, pepper, and soup in a large bowl. Add potato mixture; toss gently to combine. Spoon mixture into an 11 x 7-inch baking dish coated with cooking spray. Sprinkle with remaining 3/4 cup cheese. Cover with foil coated with cooking spray. Refrigerate 8 hours or overnight.

Preheat oven to 350°.

Remove casserole from refrigerator; let stand at room temperature 15 minutes. Bake casserole, covered, at 350º for 30 minutes. Uncover and bake an additional 30 minutes or until bubbly around edges and cheese begins to brown.

Printed. What is southern style? Shredded or diced?

The ones I found are diced. I thought they might also have peppers in them, but the bag I picked up did not. It actually said "Southern Style" on the bag.

I'm making this either Christmas night or the next morning.

Sounds great. I think I will too. I picked up a couple bags of diced frozen hash browns (without onions and pepper, though I love those too). My mom always made a delicious hash brown casserole to go with breakfast on Christmas morning.

I made this tonight. It was really yummy and soul-satisfying on this cold night. I used regular cheddar, but otherwise followed the recipe. I didn't even add extra bacon even though I thought about it.
