I developed a liking for ginger cookies when I lived for a year in Germany. My grandchildren like ginger cookies too. I think I'll make these for them.

I made these today and they are pretty tasty. The are crispy outside and chewy inside. They do not seem to hold up well to a slight underbake. Use the full 10 minutes.

Roll dough into 1" balls and gently roll again in the granulated sugar until completely coated.
