Présentez-la comme un gâteau, parfumée avec un fromage typé, comme le fromage de brebis des Pyrénées.</DIV>

<B>Pour 4 pers. </B>
<B>Ingrédients</B>
60 cl de lait
160 g de semoule de maïs
60 g de beurre<BR /><DIV>
120 g de fromage pur brebis Pyrénées</DIV>
    
Faites bouillir le lait dans une casserole. Ajoutez la semoule de maïs en pluie, salez, poivrez et laissez cuire 8 à 10 min sur feu doux en remuant avec une spatule en bois. En fin de cuisson, hors du feu, ajoutez 40 g de beurre, laissez tiédir puis ajoutez le fromage pur brebis Pyrénées en petits cubes. 
Versez la polenta dans un moule à manquer huilé, lissez la surface avec le dos d’une cuillère puis laissez complètement refroidir. <BR /><DIV>
Démoulez la polenta, coupez-la en part, faites-la dorer dans une poêle dans le reste du beurre. Au moment de servir, déposez des copeaux de fromage pur brebis Pyrénées dessus.</DIV>
