Arrggh! I was going to make this for dinner tonight (along with some lentils and rice, foul, hummus and rice crackers), but I can't find any fresh mint. I went to two grocery stores and both of them are sold out of mint.

That is a bummer, Bunni. Try growing some mint in a pot. It is crazy hard to kill and grows like gangbusters.

Hmm...mint in a pot...maybe its time for us to bring back the idea of Clipmarks Mojito parties (we talked about that a while back, didn't we?).


I did finally get my hands on some mint and made this salad. It is really nice and refreshing. Perfect for a hot summer day (or a foggy, humid one...).
